Partially whip the egg white using a whisk at room temperature. Blend in the grated Parmesan cheese, mixing well and if the dough is too soft, add some very fine 00-type plain flour. Make some dough balls using your hands; you can use an ice-cream scoop to speed up the process. Allow the balls to chill in the fridge at 2°C Bring the peanut oil to 175°C and fry the balls until golden brown. Serve in a container of your choice accompanied by Armonia di Pistacchio sauce.
